In cooking butter is love. It’s hard to add too much. Meal after meal it is always a welcome addition. But beware. When meals become months, and months become years – as beautiful as love can be – there is danger. Too much butter hardens the heart. Love invites change. Substitute a good olive oil.

In cooking salt is passion. Too little announces boredom, too much simply untenable. Your precision with passion is telling. Fools take an intellectual approach – with their weights and measures. Passion and risk-taking go hand in hand. Salt should be added visually. Always. Let there be abandon in your gesture of hand, and a ‘so be it’ on your lips.

In cooking red wine is sexual tension. When this ingredient is added to the relationship, never approach the pot too soon. The vapours may be heady, but ultimately an illusion. Wait. Let it simmer. The full flavour must be allowed time to mature, then can be maintained right up to the table.
